In addition, moderate vegetables can also maintain normal functions for the human organs. However, the excessive intake of vegetables can seriously endanger the human health. For example, many kinds of vegetables like spinach, celery and tomato contain oxalic acid which can react with calcium contained in other foods to produce calcium oxalate stone. This is why some women who always eat excessive vegetables are easy to get lithiasis. Most vegetables are alkaline foods. If the patients with lithiasis eat a large number of alkaline foods in everyday life, the calculus in their bodies can be increased and it is hard to discharge them from the body. Some vegetables contain lots of coarse fibers, such as celery and bamboo shoots. It is difficult for people to digest such vegetables. Therefore, the patients with gastrointestinal diseases should eat such vegetables in a right amount. In addition, the patients with cirrhosis can also eat excessive vegetables containing abundant coarse fibers. Excessive vegetables with abundant coarse fibers can worsen the symptoms of cirrhosis, causing gastrorrhagia and bleeding of esophageal varices.

    For the pregnant women and growing teenagers, the high intake of vegetables can restrain the absorption of calcium and zinc inside the human body and affect the normal development of intelligence and bones. If people just eat vegetables to lose weight and make themselves full, the intake of fatty acid and protein needed by the human body will be seriously affected and malnutrition will be caused. In addition, some other essential nutrients like calcium, iron and zinc can not be absorbed just from vegetables. People, especially women, should pay attention to the formation of iron-deficiency anemia and acalcerosis because of vegetarian diet.

    In short, people can not achieve health just by eating vegetables. Excessive vegetables can seriously endanger the human health. The ratio of vegetables and meats should be balanced.
