    A glycerol ester of fatty acids in which only one acid group is attached to the glycerol group. A typical formula is RCOOCH2CH2OCH2OH. Small amounts of monoglycerides occur naturally.
    Derivation:
    Produced synthetically by the alcoholysis of fats with glycerol, yielding a mixture of mono-, di-, and triglycerides that is predominantly monoglycerides.
     
    Use:
    Emulsifiers, cosmetics, lubricants.
