 Polydextrose (68424-04-4) is commonly used as a replacement for sugar, starch, and fat in commercial beverages, cakes, candies, dessert mixes, breakfast cereals, gelatins, frozen desserts, puddings, and salad dressings. Polydextrose is frequently used as an ingredient in low-carb, sugar-free and diabetic cooking recipes. It's also used as a humectant, stabiliser and thickening agent. Polydextrose (68424-04-4)  is a form of soluble fiber and has shown healthful prebiotic benefits when tested in animals.It contains only 1 kcal per gram and therefore is able to help reduce calories.

From glucose, sorbitol alcohol and citric acid mixture according to the ratio of 89:10:1, in the molten state polycondensation vacuum. The molten polymer put cold, milling, and in using potassium hydroxide and bleaching, the availability of 70% of the transparent solution. With potassium hydroxide or potassium bicarbonate, and dry-mixed powder products available polydextrose-N (ie during and after the poly-glucose).

When heated to decomposition it emits acrid smoke and irritating fumes.
