The rate of carotenoid degrdn. decreased with the increase in aw. Methyl myristate [124-10-7], methyl palmitate [112-39-0], methyl stearate [112-61-8], and methyl oleate [112-62-9] enhanced the stability of watermelon carotenoids. In relative terms, the effect of Me myristate and Me palmitate was higher than that of Me stearate and Me oleate. Carotenoids were relatively more stable in starch [9005-25-8], sugar, and pectin [9000-69-5] systems than in CM-cellulose [9004-32-4] and gelatin systems.
