DOCUMENT TYPE: Conference CA Section: 17 (Foods) Section cross-reference(s): 16 The polyphenolic and terpenoid constituents of 2 types of grapes common in the Emilia and Romagna regions of Italy were detd.: Albana and Trebbiano grapes. In both cases, (+)-catechin (I) [154-23-4] was the main flavanoid present, with (-)-epicatechin (II) [490-46-0] present in smaller quantities. (-)-Epicatechin 3-gallate [1257-08-5] was found only in the Albana grape and (+)-gallocatechin [970-73-0] only in the Trebbiano grape. In neither case were there any flavonoids in the free state, but only isoquercitrin [21637-25-2] and a kaempferol glucoside [27614-89-7], in which the position of the glucose was not detd. Of the terpenoid constituents, oleanolic acid [508-02-1] and .beta.-sitosterol [83-46-5], both in the free state and as 3-O-glucosides were found in each type of grape. Study of the Albana grapes produced in 2 successive years showed that seasonal variation, particularly rainfall had no effect on the qual. compn. of the polyphenolic and terpenoid constituents, though quant. there were variations. Concerning the presence of flavanoids and flavonoids in Albana and Trebbiano wines, only if fermn. were conducted with the pomace in the must did these substances appear in detectable quantities. This raised serious doubts about their being the substances responsible for the browning of white wines. The exptl. study was prefaced by an extensive review of the title techniques.

Orally administered (-)-epicatechin gallate [1257-08-5] and (-)-epigallocatechin gallate [989-51-5] from tea leaves lowered the serum cholesterol level in mice fed a high-fat emulsion. Quantitation of tissue cholesterol and examn. of liver tissues in mice fed a high-cholesterol diet revealed that these constituents also significantly lowered the amt. of cholesterol crystn. These results support the reputed effectiveness of tea against hypercholesterolemia.
