Values are tabulated for MeCHO [75-07-0], Me2CO [67-64-1], MeOAc [79-20-9], EtOAc [141-78-6], MeOH [67-56-1], PrOH [71-23-8], iso-BuOH [78-83-1], tert-BuOH [75-65-0], acetyl methyl carbinol [513-86-0], isoamyl acetate [123-92-2] 2-butanol [78-92-2], and 2- [137-32-6] and 3-methylbutanol [123-51-3]. Red wine vinegars contained approx. half the MeOH and isoamyl acetate, one-thrid the Me2CO, 4-fold the MeOAc, and 10-fold the tert-BuOH levels of white wine vinegars. Abnormal white vinegars had elevated levels of MeCHO, Me2CO, tert-BuOH, and PrOH, and abnormal red vinegars had high levels of Me2CO, acetyl methyl carbinol, and 2-BuOH.

The heat capacity data obtained in this work were merged with available exptl. data from literature, critically assessed, and sets of recommended data were developed by correlating selected data as a function of temp. .
