- Toxicological assessment of flavoring esters. Grundschober, F. (Neth.). Toxicology, 8(3), 387-90 (English) 1977. CODEN: TXCYAC. ISSN: 0300-483X. DOCUMENT TYPE: Journal CA Section: 17 (Foods) Section cross-reference(s): 4 If an ester is readily hydrolyzed by mammalian enzymes to components whose metab. and interactions are understood, further toxicol. study may not be necessary. Twenty-seven esters were tested with pancreatin [8049-47-6] by incubating at 37° for 2 h; 10 were completely hydrolyzed, 11 were hydrolyzed 15-90%, and there was no detectable (gas chromatog.) hydrolysis of the remainder. Of those compds. only slightly hydrolyzed (£20%), 5 were hydrolyzed 390% by a pig jejunum hydrolyzate, and 2 were hydrolyzed >99% by a pig liver homogenate. Only dimethylbenzylcarbinyl acetate [151-05-3] had little enzymic hydrolysis (0, 0, and 20% with pancreatin, jejunum, and liver, resp.).
