The toxicity of these substances was very low and that of p-dimethylaminocinnamic acid virtually nil. The low toxicity, comparable to that of the natural components of foods and drinks, and the antifungi-antiyeast spectrum of these compds., esp. of p-dimethylaminocinnamic acid, recommends their use in the preservation of foods.
