Gland tissue samples from freshly slaughtered bucks and does also were obtained for lipid anal. Identified as the major compd. responsible for 1 of the characteristic odors of the buck was 6-trans-nonenal [2277-20-5]. Isolation of the compd. as its 2,4-dinitrophenyl hydrazone was achieved by column chromatog. and TLC. Tentative identification was based on comparison with known compds. by argentation TLC, retardation factors for the 2,4-dinitrophenyl hydrazone derivs., and gas-liq. chromatog. retention times of regenerated compds. The presence of other nonenals suggests that the compd. may be formed by oxidn. of the gland lipids. The odor of the male goat in rut often is implicated as a source of the goaty flavor problem in fresh goat milk. When added to goat milk, 6-trans-nonenal yielded a significant melon-musky flavor response from the flavor panel; the goaty flavor response was more significant for added 4-Et octanoic acid [16493-80-4], 4-Me octanoic acid [54947-74-9], and 4-Et oct-2-enoic acid [90464-78-1]. .

After Me-esterification of the sapond. carboxylic acid fraction, analyses with gas chromatog.Several substances with their cas registry numbers 16493-80-4 and 80480-08-6 may be metioned in this study. (GC), GC-mass spectrophotometry (GC-MS), and NMR were done. Following extn. and fractionation, the odor was finally collected in the sapond. fraction which contained free fatty acids, and analyses of this fraction with GC, GC-MS, and NMR revealed the existence of 4-Et-branched fatty acids, i.e., 4-Et-octanoic acid [16493-80-4] (1-2%), 4-Et-decanoic acid [25234-31-5] (15-20%), 4-Et-dodecanoic acid [80480-06-4] (40-55%), 4-Et-tetradecanoic acid [80480-07-5] (10-20%), and 4-Et-hexadecanoic acid [80480-08-6] (5-10%). The structures of these substances were also confirmed by synthesis. 4-Et-octanoic acid showed the strong goaty odor at low concn. In the immature goat, free carboxylic acids were not detected in the hairs, and the carboxylic acid compn. was widely different from that of the mature male goat. Biol. tests on reproductive behavior using synthetic 4-Et-octanoic acid revealed that mature female goats, including estrous ones, were interested in the odor. .
