DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) The protective effect of carboxylic acid and the joint protective effects of various mixts., which included carboxylic acids, sorbitol [50-70-4], and Na glutamate [142-47-2] on the thermal stability of chub mackerel myofibrils were studied by measuring the change in the 1st order rate const. (kD) for inactivation of their Ca-ATPase. Plotting the logarithm of kD against the concn. (0-1.5 M) of carboxylic acid, a single linear relation was obtained. The slope (E) of the graph of log kD vs. molarity of carboxylic acid revealed that the protective effect against the denaturation of myofibrils becomes lower in the order of: Na citrate [68-04-2], Na gluconate [527-07-1], Na malate [304-60-9], Na tartrate [868-18-8], Na maleate [371-47-1], Na fumarate [17013-01-3], Na succinate [150-90-3], Na formate [141-53-7]. The protective effect of each carboxylic acid was thus roughly proportional to the no. of CO2H groups in its structural formula. The decrease in log kD showed that the joint protective effects were nearly additive for all pair combinations selected from among sorbitol, Na glutamate, and carboxylic acids. Consequently, the equation: kD(a+b) = kDb/kD0 was valid in the presence of 2 compds.
