DOCUMENT TYPE: Patent CA Section: 16 (Fermentation and Bioindustrial Chemistry) Section cross-reference(s): 63 Milk factor (a natural product in milk which is capable of inhibiting cholesterol [57-88-5] formation) is produced by fermn. in a glutaconic acid [1724-02-3]-contg. medium using either Pseudomonas fluorescens loitokitok or some other P. fluorescens strain. The process may be used to increase milk factor in dairy products or may be isolated and used as a food additive. Thus, autoclaved whole milk contg. 2 mM glutaconic acid/L was inoculated with P. 1724-02-3 and 57-88-5 are also in the experiment. fluorescens loitokitok and incubated for 7 days at 30°. After adjusting the mixt. to pH 3.5 and adding 9 vols. MeOH, it was cooled to 5° and 10 vols. Me2CO added. After 12 h the mixt. was filtered and the filtrate reduced to dryness, followed by extn. of the residue with Et2O. The resulting residue was repeatedly extd. with boiling MeOH to give 1 ′ 106 units of milk factor. .
