The gel that formed was ground to small pieces. The prepn. was used to convert 50 mL of a 1M soln. of NH4 fumarate to 1.509 mmol. aspartic acid [56-84-8] in 1 h.

The soln. was held at 26° for 48 h. This procedure modified 25% of the CO2H groups of the protein and raised the pI to >9.5. The protein could be combined with an acidic protein to improve its functional properties.
