Acidic proteins can be chem. modified to form basic proteins. Thus, a 2% aq. soln. of acidic whey protein isolate was adjusted to pH 6 with HCl, and glycine Me ester [616-34-2] was added at 5% followed by 1-ethyl-3-dimethylaminopropyl carbodiimide [1892-57-5] at 0.6%. The soln. was held at 26° for 48 h. This procedure modified 25% of the CO2H groups of the protein and raised the pI to >9.5. The protein could be combined with an acidic protein to improve its functional properties.
