Isolation and identification of Amadori compounds from soy sauce

DOCUMENT TYPE: Journal CA Section: 17 (Foods) Amadori compds. were isolated from soy sauce by ion exchange, gel filtration, and paper chromatog. Five Amadori compds., fructose-glycine [21291-40-7], fructose-alanine [16124-24-6], fructose-valine [10003-64-2], fructose-isoleucine [34393-17-4] and fructose-leucine [34393-18-5], were identified and their concn. in soy sauce was estd. to be ~0.2, ~0.3, ~1.2, ~1.3, and ~1.5 mM, resp. The Amadori compds. exhibited marked browning in the presence of O and Fe, but darkened very little without O or Fe. Amino acids promoted the oxidative browning of the Amadori compds.

DOCUMENT TYPE: Conference CA Section: 17 (Food and Feed Chemistry) Section cross-reference(s): 4 Rats showed decreased kidney Fe when given feed high in LD-lysinoalanine [105450-71-3], LL-lysinoalanine [17043-71-9], or fructosyl lysine [21291-40-7], and increased kidney Zn when given LL-lysinoalanine. The LD isomer increased kidney Cu. Liver Cu and Zn were not affected by the compds. Urinary Fe and Zn were increased by LD-lysinoalanine and urinary Zn was increased by protein-bound fructosyl lysine. Urinary Cu was moderately high in all exptl. rats. The chelating properties of the compds. may be responsible for these changes in the trace elements. .
