DOCUMENT TYPE: Journal CA Section: 17 (Foods) The volatile constituents of cooked beets (Beta vulgaris), obtained by distn.-extn. of the beets, were sepd. by gas chromatog. and subjected to IR and mass spectral anal.; 17 compds. were identified. A unique feature of this vegetable is the high concn. of 4-methylpyridine [108-89-4], and pyridine [110-86-1], which constitute about 60% of the total volatiles. Other components present at >1% include Me2S [75-18-3], isovaleraldehyde [590-86-3], EtOH [64-17-5], isopentanol [123-51-3], and furfural [98-01-1]. The occurrence of geosmin [19700-21-1], and 2-methoxy-3-sec-butylpyrazine [24168-70-5] was confirmed; the low flavor thresholds of these compds. suggest they play a role in beet flavor.

The methoxypyrazine derivs. were likely to be of major significance in the characteristic earthy, green aroma with moldy undertone of Ginseng Radix. One of them was a novel methoxypyrazine deriv., 3-sec-butyl-2-methoxy-5-methylpyrazine (I) [94344-70-4] and the structures of 3-isopropyl-2-methoxy-5-methylpyrazine [32021-41-3] and I were estd. from mass spectra of known methoxypyrazine derivs., 2-isopropyl-3-methoxypyrazine [25773-40-4] and 2-sec-butyl-3-methoxypyrazine [24168-70-5] and confirmed by their syntheses. I possessed a characteristic floral, moldy, green aroma with an odor threshold of 2.0 parts/109 parts of water. The mass spectra of methoxypyrazine derivs. showed similar systematic fragmentations starting from McLafferty rearrangement and g-cleavage, and the mass spectrometry was a useful method for structural elucidation and detection of methoxypyrazine derivs.
