DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) A liq. meat aromatizer (obtained from gelatin hydrolyzate by Maillard reaction), a dry meat aromatizer (obtained by drying the liq. meat aromatizer), and aromatized gelatin volatile compds. were compared after 8-mo storage at room temp. Dry aromatizer contained high levels of meat aroma compds., mainly methional, furfural, 2-methylfuranthiol-3, and furfuryl mercaptan. Drying increased the relative concn. of 2-methylfuranthiol-3 by 2.5-fold and decreased that of furfural and methional by a factor of 4-5. 2527-76-6 and 3268-49-3 which are cas registry numbers of chemicals are mentioned. The levels of the key meat aroma compds. in aromatized gelatin were lower than in liq. aromatizer by a factor of 1.6-2. During storage of dry aromatizer, the relative content of 2-methylfuranthiol-3 slowly decreased and that of furfuryl mercaptan, slowly increased. At the end of the storage period the relative level of meat aroma compds. in dry aromatizer was higher than that in liq. aromatizer. It is suggested that dry meat aromatizer can be used for aromatization of food concs. intended for prolonged storage. .
