DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) The av. contents of sol. fraction, total N, theanine [3081-61-6], caffeine [58-08-2], tannin, reducing sugars, and vitamin C [50-81-7] in 10 brands of Chinese green tea were 41.5, 4.9, 0.8, 2.9, 12.5, 0.9, and 0.12;, resp.; the sol. N content accounted for ~30% of the total N content. The vitamin C and reducing sugar contents of Chinese green tea were lower than those of sencha (a middle-grade Japanese green tea). The solubilization of sol. fraction, N content, theanine, and reducing sugar in 80° water from the Chinese green tea was slower than that from the sencha. The green coloration was less, whereas the brown coloration was more, intense in the Chinese green tea than in the sencha.

DOCUMENT TYPE: Journal CA Section: 19 (Fertilizers, Soils, and Plant Nutrition) Of the forms of N fertilizers compared the efficacy of (NH4)2SO4 was inferior and that of urea tended to be superior when compared with the others.. Urea-N tended to decrease the differences in N content of the stalklets during the growth season. The protein-N/nonprotein-N ratio in the stalklets was relatively low indicating a low synthetic activity by the tea. The caffeine [58-08-2] content of the leaves increased only insignificantly by N application; only urea-N tended to increase the caffeine content of May-harested leaves. When urea was applied, the free amino acids, esp. the monoaminocarboxylic acid, content increased and in July-Aug. a significant increase in heterocyclic amino acids was obsd., esp. when NH4NO3 was applied. The theanine [3081-61-6] content increased most in June when urea and in July when urea, ureaform, or (NH4)2SO4 was applied. Differences in total free amino acid content of the leaves depending on fertilizer form are detailed.
