DOCUMENT TYPE: Journal CA Section: 34 (Amino Acids, Peptides, and Proteins) Section cross-reference(s): 17 A series of 24 analogs of H-Asp-Gly-Gly-OMe were synthesized. These peptides have structural features previously found for sweet aspartyl dipeptides. 3479-47-8 which is the cas registry number of one of substances is just one of reagents here. In order for the aspartyl tripeptide esters to be sweet, the second amino acid must have a D-configuration and a small, compact alkyl group (Me, Et, or Me2CH). An L-configuration of the 3rd amino acid is required for a potent sweet taste. The above small alkyl group participates in binding with the receptor through a hydrophobic interaction and increases the sweetness potency. .
