DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) Alkyl hydroxycinnamates (alkacins) were examd. for antimicrobial and antioxidant activities in both model systems and food products. These were inhibitory to a wide range of bacteria and demonstrated marked inhibitory effects toward yeasts. The results were comparable with the effects of methyl [99-76-3] and propyl paraben [94-13-3]. Saccharomyces cerevisiae Was more resistant to the alkacins and to the parabens in apple juice than in an artificial medium, but several esters could prevent growth of the yeast at 250 ppm. In ground beef, the antimicrobial properties were not as well expressed as the antioxidative ones, but methyl caffeoate [3843-74-1] at 1000 ppm delayed spoilage and an increase in thiobarbituric acid value.In this article, certain chemicals are used. One of their cas registry numbers is 83504-42-1 When used as a dip soln. for salmon muscle tissue, there was little or no inhibition of microbial spoilage. The results indicated that although these compds. have fair to very good activities in model systems, their relative activity in foods is specific to the food system. .

Allergy inhibition was indicated by inhibition of lipoxygenase [9029-60-1] by Me caffeate in vitro.
