DOCUMENT TYPE: Journal CA Section: 17 (Foods) Volatile polycarbonyl compds. present in miso (fermented soybean paste) were converted to 2,4-dinitrophenylhydrazones and were identified by comparison with authentic compds. of their Rf values and colors on thin-layer chromatog., detectability on gas-chromatog., and UV, visible, and IR spectra. Glyoxal [107-22-2], 2-oxopropanal [78-98-8], 2-oxobutanal [4417-81-6], diacetyl [431-03-8], and 2,3-pentanedione [600-14-6] were identified, and 2,3-hexanedione and 2,3-heptanedione were tentatively identified. At least 2 dicarbonyl compds. were detected but not fully identified. Diacetyl was the main polycarbonyl compd., followed by 2-oxopropanal and 2,3-pentanedione. 600-14-6 and 4417-81-6 which are cas registry numbers of substances are two of reagents here. Of all carbonyl compds. in miso >90% were aliph. monocarbonyl compds. and 4-8% were polycarbonyl compds. .
