DOCUMENT TYPE: Journal CA Section: 18 (Animal Nutrition) The effects of 5, 10, or 15% dietary protein and umami (MSG [142-47-2] or IMP [4691-65-0], considered to be a taste signal of dietary protein) on preference for NaCl (0.5-2.0%) were conducted on spontaneously hypertensive rats (SHR), Wistar-SPC rats, and Sprague-Dawley (SD) rats. In SHR, for all 3 dietary protein levels, the most acceptable NaCl concn. was 0.9%. However, rats fed the low protein diet showed a preference not only for the 0.9% soln. but also for 1.4% NaCl soln. Rats fed the high-protein diet showed a preference not only for the 0.9% soln. but also for 0.5% and for deionized water. Thus, the total amt. of NaCl consumed by SHR on the low-protein diet was higher than on the high-protein diet. This tendency was also obsd. in SD and Wistar rats. Coronary artery and kidney prepns. from SHR generally showed atherosclerotic changes, but esp. advanced degenerative lesions were found in SHR fed the low-protein diet. In contrast, no atherosclerotic changes were obsd. in SD or Wistar rats. Thus, atherogenesis was assocd. with genetic hypertension and dietary factors (low-protein diet and high NaCl intake). In addnl. expts., 5 mM MSG and 5 mM IMP were added in parallel to the graduated series of NaCl solns. SHR, SD, and Wistar rats fed a low-protein diet did not response to the MSG soln. and only slightly responded to the IMP soln. In contrast, the umami solns. (MSG and IM) were preferred on the high-protein diet. This led to reduced intake of NaCl. The mechanisms of the reduced preference for salty taste in rats fed a high-protein diet or MSG are discussed.
