DOCUMENT TYPE: Journal CA Section: 17 (Foods) Seventeen compds. produced from the reaction of furfural, hydrogen sulfide, and ammonia in aq. soln. under cooking conditions were identified by gas chromatog.-mass spectrometry. Major reaction products were cyclic methylene polysulfides and furan derivs. The formation of oxazole and pyrazine derivs. indicated that furfural produced a smaller no. of carbon units. 1192-79-6 which is the cas registry number of some chemical is mentioned. The formation of thiophene and pyrrole derivs. indicated that the O atom in the furan ring exchanged with the S and N atoms. In addn. to those compds., 2 self-condensation products of furfural, difurylethylene [36707-31-0] and furil [492-94-4], were obtained in large amts. from this reaction. .
