DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) Section cross-reference(s): 4 The active part in mutagenesis of [6]-gingerol [23513-14-6], a mutagen in ginger (Zingiber officinale), was studied in Escherichia coli B/r. [6]-Shogaol [555-66-8] was isolated from the ginger by column chromatog. on silica gel. [6]-Shogaol was much less mutagenic (1 ′ 103 revertants/108 viable cells/700 mM) than [6]-gingerol (1 ′ 107 of the same units). 555-66-8 and 496-77-5 are cas registry numbers of chemicals which are used as reagents here. Mutation frequencies of their related compds. were 4 ′ 101 for zingerone [122-48-5], 1 ′ 107 for 3-hydroxymyristic acid [1961-72-4] and 3 ′ 102 for 12-hydroxystearic acid [106-14-9]. Curcumin, and myristic, stearic and oleic acids had no mutagenicity; and diacetone alc. [123-42-2] and butyroin [496-77-5] suppressed mutation. Thus, the active part of [6]-gingerol is the aliph. chain moiety contg. a OH group. .
