DOCUMENT TYPE: Journal CA Section: 4 (Toxicology) Section cross-reference(s): 18 The toxicities of fermented ammoniated condensed whey (FACW), ammonium lactate (AL) [515-98-0], ammonium acetate (AA) [631-61-8], and urea [57-13-6] were examd. in 4 steers consuming 50% corn silage-50% conc. rations. Intraruminal infusion of FACW at 400 mg N/kg resulted in acute toxicity, as evidenced by muscle tremors, incoordination, and collapse of 2 of the 4 steers. Infusion of AL at 400 mg N/kg resulted in similar symptoms of acute NH3 toxicity in 3 of 4 steers. Infusion of FACW or AL at 300 mg N/kg did not result in acute toxicity. When AA was infused at 300 and 400 mg N/kg, acute toxicity was obsd. in 1 and 2 steers, resp. When FACW, AL, or AA was infused at 200 mg N/kg, none of the animals showed symptoms of acute toxicity. In contrast, 2 of the steers infused with urea at 200 mg N/kg exhibited symptoms of acute toxicity. FACW and ammonium salts did not elevate rumen pH, whereas urea infusion significantly elevated rumen pH levels. At 30 min after infusion, steers given FACW, AA, or AL had lower plasma NH3 levels than did urea-infused steers. FACW can be used as supplemental N for feedlot cattle with little chance of causing NH3 toxicity, even when fed at 2-3-fold the level of N normally consumed in a daily ration.

DOCUMENT TYPE: Journal CA Section: 18 (Animal Nutrition) Whey from cottage cheese was fermented with Lactobacillus bulgaricus at 43° and pH 5.5 (NH3 was added continuously to maintain the pH), and the fermented product was fractionated by dialysis into a protein fraction contg. whey proteins and bacterial cells and an ammonium lactate [515-98-0] fraction. The protein fraction was concd. by evapn., lyophilized, contained 95.5% total solids, 64.4% crude protein, 6.9% lactose, and had a gross energy of 5.5 kcal/g. Approx. 91.6% of crude protein in the protein fraction was hot trichloroacetic acid-precipitable or true protein. The modified essential amino acid index and in vitro protein digestibility of the protein fraction were 99 and 92.4%. Based on feeding trials with rats, the protein fraction had a protein efficiency ratio of 4.1 ± 0.15 which was higher than the protein efficiency ratio of 3.34 ± 0.26 for casein. Protein fraction is a potentially valuable protein supplement for humans. The ammonium lactate fraction, concd. by evapn. to 32° Baume, contained 63.9% total solids, 53.8% crude protein, 0.6% lactose, and had a gross energy of 3.5 kcal/g. The trichloracetic acid-sol. N accounted for 99.9% of the total N in this fraction, of which 74.4% was NH3. The ammonium lactate fraction is a potential nonprotein N-supplement for ruminants.
