Degradation of 2,4,6-trialkyltetrahydro-1,3,5-thiadiazines during storage
Degradation of 2,4,6-trialkyltetrahydro-1,3,5-thiadiazines during storage. Kawai, Tetsuo; Irie, Mamoru; Sakaguchi, Morihiko (Lab. Flavor Subst., Shiono Koryo Kaisha, Ltd., Osaka 532, Japan). J. Agric. Food Chem., 33(3), 393-7 (English) 1985. CODEN: JAFCAU. ISSN: 0021-8561. DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) Degrdn. of 2,4,6-trialkyltetrahydro-1,3,5-thiadiazines [where alkyl is methyl (I) [53897-63-5] or ethyl (II) [95465-59-1]] during storage was studied. Both I and II were synthesized from aldehyde, NH3, and H2S and decompd. largely to the corresponding 2,4,6-trialkyldihydro-1,3,5-dithiazines [where alkyl is methyl (III) [86241-90-9] or ethyl (IV) [54717-17-8]] and N,N'-dialkylidene-1,1--diaminoalkanes [where alkyl is ethyl (V) [623-75-6] or propyl (VI) [40899-13-6], resp.] during storage. Some other compds. which simultaneously occurred were identified as N-ethylidene-1-aminoethene [21972-04-3], N-ethylidene-1,1'-diaminoethane (VII) [95465-58-0], and N-propylidene-1-amino-1-propene (VIII) [31201-89-5] by gas chromatog.-mass spectrometry. Diaminoalkanes V and VI are thermally decompd. further to VII and VIII. A pathway was proposed for the degrdn. of I and II to VII and VIII as well as to III and IV. Odor profiles of I-IV were described in relation to pH.
