The mixt. was nontoxic and markedly inhibited capillary permeability and increased capillary resistance in mice; this biol. activity was comparable to that of other anthocyanoside mixts. These observations are relevant to the treatment of eye disease in older patients.

(5 L) at 50-55° for 20-25 min, the ext. was filtered, and Me2CO was distd. off to give dry product (60 g) contg. 12-13% red pigment suitable for coloring confectionery products, fruit-berry jams and jellies, nonalc. beverages, sausages, and other foods. The pigment could be used instead of NaNO3 in sausage manuf. Preliminary anal. showed that the pigment contained cyanidin-3-glucoside [7084-24-4], delphinidin-3-glucoside [6906-38-3], and malvidin-3,5-diglucoside [16727-30-3]. The pigment had good coloring capacity. It was thermostable and did not change the organoleptic properties of foods.
