Acetaldehyde [75-07-0], propionaldehyde [123-38-6], acetone [67-64-1], isobutyraldehyde [78-84-2], n-butyraldehyde [123-72-8], diacetyl [431-03-8], Me Et ketone [78-93-3], isovaleraldehyde [590-86-3], diethyl ketone [96-22-0], n-valeraldehyde [110-62-3], n-capronaldehyde [66-25-1], and acetoin [513-86-0] were identified. Ferricyanide reducing-compds. and carbonyl compds. were found more in the sake made from white rice bran than the sake made from white rice.

The products and the rates depend in a complex way on the initial reactant concn. and pH. Acetaldehyde prodn. is favored at low bromine-to-alanine ratios, low bromine concns., and pH values above 6. The first-order rate const. for the formation of acetaldehyde from alanine under these conditions is given. At higher concns. the nitrile is formed through a bromoimine intermediate. Under most conditions the nitrile appears to form from a catalyzed decompn. of the bromo imine which is too fast to be followed by the methods used in this study. However, residual amts. 7726-95-6 and 56-41-7 are just another two chemicals used in this study. of the bromo imine decay by a slower first-order mechanism. .
