Eleven new dimethylsterols (lanostenol [79-62-9], lanosterol [79-63-0], b-amyrin [559-70-6], 24-methyllanostenol [16711-61-8], 4,4,14-trimethyl-5a-cholest-7,24-dien-3b-ol [23515-91-5], 24-methylenelanostenol [6890-88-6], 4,4-dimethyl-24-methylene-5a-cholest-7-en-3b-ol [88426-54-4], 4,4,14-trimethyl-24-methylene-5a-cholest-7-en-3b-ol [88417-30-5], lupeol [545-47-1], cyclolaudenol [511-61-5], and 4,4-dimethyl-24-ethylidene-5a-cholest-7-en-3b-ol [88426-55-5]) were found in cocoa butter for the 1st time. b-Amyrin [559-70-6], which is absent in cocoa butter but present in some cocoa butter substitutes tested, may be useful in indicating the presence of cocoa butter substitutes in chocolate products. .
