DOCUMENT TYPE: Journal CA Section: 17 (Food and Feed Chemistry) Ten varieties of potato cultivated under the same conditions were analyzed for the occurrence of chlorogenic acids by high performance liq. chromatog. 3-O-Caffeoylquinic acid (n-chlorogenic acid) [327-97-9] was the predominant compd. with 22-71 ppm ( av. 41 ppm), depending on variety. 4-O-Caffeoylquinic acid [905-99-7] (11 ppm), 5-O-caffeoylquinic acid [906-33-2] (7 ppm), 3,4-dicaffeoylquinic acid [92077-00-4] (3 ppm), and at times 3,5-dicaffeoylquinic acid [2450-53-5] (in traces) were also demonstrated. Caffeic acid compds. were not distributed uniformly in the potato tuber. They occurred in strongly decreasing concn. from the outer sections to the inner ones. About 50% of these compds. were located in the potato peel and the adjoining tissue.

The caffeoylquinic acids dominate in the examd. spices, esp. the chlorogenic acid (3-caffeoyl-quinic acid) which occurred at 30.1%. This quinic acid ester is also present in cloves. The investigated phenolic compds. were not detected in cardamom and allspice. 4-(b-D-Glucopyranosyloxy)benzoic acid is present in the fruits of anise and staranise at ￡0.1%. A special clean up with polyamide anion exchange is described which permits definite detection of this compd., which is a characteristic phenolic constituent of the Apiaceae, at ￡1 ppm.
