ANISE OIL is used as a flavoring agent for its sweet, anise, and licorice-like taste, providing a full-bodied sweetness and a herbal nuance at 15 ppm.
ANISE OIL is also used as a fragrance ingredient for its intensely sweet aroma with an anise, licorice, anethole, and estragole-like scent, along with a clean, resinous, and slightly phenolic nuance at 2.0%.

Essential oil composition

The main constituents include anethole (85 to 90%), d-α-pinene, δ-carene, α- and β-phellandrene, p-cymene, cineol, l-limonene, d-terpineol and 25 constituents (Burdock, 1997).
