Ghatti Gum, also known as Indian Gum, is a complex, water-soluble polysaccharide exudate obtained from the Anogeissus latifolia tree, primarily found in India and Ceylon. It is composed of calcium and magnesium salts of L-arabinose, D-galactose, D-mannose, D-xylose, and D-glucuronic acids. The gum is light to dark tan, insoluble in 90% alcohol, and has a molecular weight of approximately 12,000. It is similar to gum arabic but has more viscous and less adhesive solutions.
