    A system is said to be dilatant if its rate of increase of strain decreases with increased shear. Among the better-known systems exhibiting dilatant behavior are pastry doughs, highly pigmented paints, and many other industrially important materials. Dilatancy is usually associated with suspension, especially those containing high a concentration of suspended matter, which is often of colloidal dimensions.
