A polyhydric alcohol, i.e., one containing three or more hydroxyl groups. Those having three hydroxyl groups (trihydric) are glycerols; those with more than three are called sugar alcohols, with general formula CH2OH(CHOH)nCH2OH, where n may be from 2 to 5. These react with aldehydes and ketones to form acetals and ketals.See Alcohol; Glycerol.
