Ammonium carbonate (CAS NO.506-87-6) is used as a leavening agent in particular northern European, particular recipes and Scandinavian. Sometimes,It can be substituted with baking powder, but the finished product will never be as airy and light as the original recipe.
Ammonium carbonate (CAS NO.506-87-6) was historically obtained by the dry distillation of nitrogenous organic matter such as hair, horn, decomposed urine .The crude product is refined by sublimation, when it is obtained as a white fibrous mass, which consists of a mixture of ammonium bicarbonate, NH4HCO3, and ammonium carbonate, (NH4)2CO3, in molecular proportions; on account of its possessing this constitution it is sometimes called ammonium polycarbonate.Currently, it is produced by heating a mixture of ammonium chloride, or ammonium sulfate and chalk, to redness in iron retorts, the vapors being condensed in leaden receivers.

Ammonium carbonate (CAS NO.506-87-6) also can be called Monoammonium carbonate ; Diammonium carbonate ; Carbonic acid, diammonium salt .It is hazardous,so the first aid measures and others should be known.Such as: When on the skin: first, should flush skin with plenty of water immediatelyfor at least 15 minutes while removing contaminated clothing. Secondly,Get shoesmedical aid . Or in the eyes: Flush eyes with plenty of water for at least 15 minutes, occasionally lifting the upper and lower eyelids. Then get medical aid soon. While ,it's Inhaled: Remove from exposure and move to fresh air immediately.Give artificial respiration while not breathing. When breathing is difficult, give oxygen. And as soon as to get medical aid. Then you have the ingesting of the product : Wash mouth out with water, and get medical aid immediately.
In addition, It can be stable at room temperature in closed containers under normal storage and handling conditions..It is not compatible with acids, bases, iron, sodium hypochlorite, zinc, iron salts, calomel, and you must not take it with incompatible materials, and not be exposured to moist air or water and temperatures above 55°C.And also prevent it to broken down into hazardous decomposition products: Nitrogen oxides (NOx) and ammonia (NH3), oxides of carbon.
