It is low melting point solid. And it can be insoluble in water and slightly soluble in oil. 2,5-Dimethyl-3-thiofuroylfuran is thioester flavor. It does not exist in nature, because it is an artificial flavor. It is synthetic perfume which is used to blend fragrance.
2,5-Dimethyl-3-thiofuroylfuran can be obtained by the raw material 2,5-dimethyl-3-furanthiol, furoyl chloride and pyridine through the alcoholysis reaction. The research workers made a lot efforts to determine the optimum conditions: n (2,5-dimethyl-3-furanthiol): n (furoyl chloride): n (pyridine) = 1.0:1.5:1.5, with the ether added volume 10 mL, reaction temperature 5 °C and reaction time 1.5 h. Under these conditions, the yield is 81.3%.
