This chemical is an enzyme that catalyzes the hydrolysis of terminal 1,4-linked alpha-D-glucose residues successively from non-reducing ends of polysaccharide chains with the release of beta-glucose. It is unstable at common pressure and temperature, and it should be sealed and stored in a dry place with the temperature of 4 °C. Moreover, it should be protected from moisture, heat and high temperature. Unlike the other forms of amylase, it is most efficient in acidic environments and has an optimum pH of 3. This product is mainly prepared from rhizopus and Aspergillus niger. It can be used in the catalytic hydrolysis of amylum to obtain beer, yellow rice wine, sauce, monosodium glutamate.
