2,3-Butanediol is an organic compound and isomeric form of butanediol, characterized by two hydroxyl groups attached to different carbon atoms. It appears as a colorless liquid and was traditionally obtained from the fermentation process of bacteria. It's highly used in manufacturing various plastics, solvents, and elastic fibers. Known to be a byproduct of the alcoholic fermentation of sugar, 2,3-Butanediol is found in trace amounts in certain alcoholic beverages. It's also used in the food industry as a flavoring agent due to its low toxicity. In the medical field, it's used as an anti-freeze agent in biopreservation.
