Pediocin Pediococcus acidilactici is a class II bacteriocin produced by lactic acid bacteria (LAB) of the genus Pediococcus and other gram-positive bacteria. It exhibits antimicrobial action similar to nisin and is most effective against gram-positive bacteria, with some strains of E. coli also being sensitive. Pediocins can trigger suicide mechanisms in susceptible cells by inducing the unregulated transcription of lytic enzymes involved in cell lysis. They are tolerant to heat, high hydrostatic pressure, and have a wide pH range of effectiveness.
