Trans-11-octadecenoic acid, also known as elaidic acid, is a monounsaturated fatty acid with the chemical formula C18H34O2. It is an isomer of oleic acid, differing in the position of the double bond between carbon atoms 9 and 10. Elaidic acid is found in partially hydrogenated vegetable oils, which are used in the production of margarine and other processed foods. It has a trans configuration, meaning the hydrogen atoms are on opposite sides of the double bond, which gives it a more rigid structure compared to cis fatty acids. This trans configuration is associated with potential negative health effects, such as increased low-density lipoprotein (LDL) cholesterol levels and a higher risk of heart disease. As a result, there has been a push to reduce the consumption of trans fats in the diet.
