PROBLEM TO BE SOLVED: To provide a simple method for producing α-humuladienone, capable of producing α-humuladienone that is useful as a flavor with high selectivity and high yield.SOLUTION: The method for producing α-humuladienone ((4E,8E)-2,6,6,9-tetramethylcycloundeca-4,8-dienone) includes subjecting α-humulene to a hydroboration-oxidation reaction to generate (4E,8E)-2,6,6,9-tetramethylcycloundeca-4,8-dienol (α-humulenol) and subsequently oxidizing the (4E,8E)-2,6,6,9-tetramethylcycloundeca-4,8-dienol in the presence of an oxidizing agent to obtain α-humuladienone.
