Uses
It can be used as calcium fortifier, emulsion stabilizer, dough conditioner, nutritional supplement, buffer, bulking agent, surface improver, emulsifier, curing agent, antioxidant synergist, and stabilizer.
Synthesis
When calcium carbonate encounters carbon dioxide and water, chemical attack occurs, resulting in soluble calcium bicarbonate:CaCO3+CO2+H2O=Ca(HCO3)2
