Disclosed herein are a method of purifying an N-acylamino acid amide comprising adding water and a specific organic solvent to an N-acylamino acid amide, distillating azeotropically the water and the organic acid (with further water being added from time to time if necessary), whereby the N-acylamino acid amide gets precipitated in the form of granular solid excellent in separability as the organic solvent gets solvent-replaced by the water in the course of the azeotropic distillation, and separating the solid, and the method of purifying an N-acylamino acid amide when applied to an N-acylamino acid amide contaminated with impurities such as the alkylamine used as a starting material but remaining unreacted, further comprising subjecting the said N-acylamino acid amide to the acid extraction and/or the alkali extraction, whereby the inpurities are removed.
