PRUNUS SEROTINA (WILD CHERRY) BARK EXTRACT is an almost colorless liquid obtained by steam distillation from the bark of the wild cherry tree. It has a pronounced odor of benzaldehyde and is slightly soluble in water, but soluble in 2 volumes of 70% alcohol, benzene, chloroform, or ether. The extraction process involves treating the leaves with water to trigger enzymatic hydrolysis of the glucoside (prulaurasin), yielding hydrogen cyanide and benzaldehyde. The oil used by the food industry must be free of hydrogen cyanide.
