Ficin is a purified proteolytic enzyme derived from the latex of Ficus spp., a variety of tropical fig trees. It is a white to off-white powder that is completely soluble in water, with the major active principle being ficin (IUB No. 3.4.22.3, CAS No. 9001-33-6). Ficin is a protease isolated from the latex of Ficus glabrata and is composed of several different endopeptidases. The active enzymes preferentially cleave proteins at tyrosine and phenylalanine residues, resulting in hydrolysates with low bitterness and more controlled tenderization than bromelain or papain.

Uses

Used in Meat Industry:
Ficin is used as a meat tenderizer and an agent for removing casings from formed sausage. It has been cleared by the Meat and Poultry Inspection Division to soften tissues of beef cuts and raw poultry muscle tissue, with solutions consisting of water and approved proteolytic enzyme applied or injected into raw poultry tissues or cuts of beef not resulting in a weight gain of more than 3%.
Used in Brewing Industry:
Ficin is used as a chill proofing agent in beer.
Used in Cheese Industry:
Ficin is used as a substitute for rennet in the coagulation of milk.
Used in Leather Industry:
Ficin is used for the bating of leather.
Used in Textile Industry:
Ficin is used for shrinkproofing wool, removing gelatin from sized thread, and mixed with amylases and maltases as a spot remover.
Used in Biochemical Research:
Ficin is used in the preparation of peptones and for solubilizing protein material in spent grains. It is also used in the determination of the Rh factor, speeding up the agglutination of human blood cells by the Rh factor when in contact with the anti-Rh serum.
Used in Medical Research:
Ficin from fig tree latex has been used in the proteolysis of tendon collagen, the digestion of Chlorophyta Ulva rigida to investigate its effect on protease-activated receptors 2 and 4 activation to induce itch in skin, and in the electron paramagnetic resonance (EPR) and steady-kinetic measurements for assessing its peroxidase functionality.
Used in Histology and Immunostaining:
Ficin from fig tree latex has been used for the digestion of eye tissue sections prior to immunostaining and immunofluorescence.

Poison by inhalation and intravenous routes. Mildly toxic by ingestion. When heated to decomposition it emits toxic fumes.
