  • Chemical Composition Sodium metabisulfite (SMB) is an inorganic sodium salt composed of sodium and disulfite ions in a 2:1 ratio.
  • Antioxidant and Preservative SMB is widely used as an antioxidant and antibacterial preservative in various food products such as fruits, vegetables, seafood, and alcoholic beverages. It is also utilized in the pharmaceutical industry to improve the stability of active principles in medications.
  • Adverse Effects Improper use of SMB can lead to several adverse effects, including genotoxicity, lipid peroxidation, and cell death. High oral doses of SMB have been associated with increased cell damage indexes and genotoxic effects on mouse tissues. In rat stomach tissue, high levels of SMB can induce apoptosis and lipid peroxidation. Furthermore, SMB has been linked to nerve cell damage through excitotoxicity.
  • Industrial Applications SMB has been utilized in industrial processes, such as replacing lime as a pyrite depressant in the rougher flotation stage of Cu-Mo-Fe ores in Chile. It has also been shown to selectively depress the float ability of chalcopyrite in flotation processes.
  • Use in Edible Coatings SMB has been incorporated into edible coatings to improve the appearance and conservation of foods. These coatings act as barriers to moisture and oxygen, delaying spoilage, and increasing safety.
  • Synthetic Reactions SMB has been utilized in sulfonylation reactions as a sulfur dioxide surrogate, leading to the synthesis of S-aryl thiosulfonates, which are important synthetic building blocks in organic chemistry.
