    Sodium alginate can contain acetyl substituents, and the amount may vary among products from different sources.
  • Properties Sodium alginate exhibits high biocompatibility, biodegradability, and renewability. It is hydrophilic and can form colloidal dispersions in both cold and hot water.
    In the presence of divalent cations like calcium, it forms a three-dimensional network (gel), described by the "egg box" model.
