Regioselective Enzymatic Deacetylation of Sucrose Octaacetate in Organic Solvents.

The first examples of deacetylation of sucrose octaacetate using proteases and lipases in organic solvents are reported.The regiochemistry of the product sucrose hepta-, hexa- and pentaacetates was established by perdeuteroacetylation and 1H-NMR.Preparation of key intermediates in the commerical synthesis of the high intensity sweetener, sucralose was achieved.
