Monoesters of sucrose and arachidonic acid have been synthesized by the transesterification of ethyl arachidonate with unprotected sucrose, and the structural isomers - 6-O-arachidonoylsucrose, 6'-O-arachidonoylsucrose, and 3-O-arachidonoylsucrose - have been separated chromatografically.The positions of the ester bonds in these compounds were determined by the 13C NMR method.
