The CAS registry number of Yeast extract is 8013-01-2. It often contains free glutamic acid. The liquid form of this product can be dried to a light paste or a dry powder. In addition, it is used as food additives or flavourings, or as nutrients for bacterial culture media.
Preparation and uses of Yeast extract: it can be extracted from various yeast such as beer yeast, wine yeast and Saccharomyces cerevisiae. The autolysis method is the main method to produce it. The glucanase and protease of the yeast will take place plasmolysis after autolysis reaction. And it is a kind of vitamin medicine which can be used to treat vitamin B1 deficiency. In addition, it can used as a flavoring, stabilizers, emulsifier and thickener.
