A novel ability of baker's yeast in hydrolysis of Amadori compounds (1-deoxy-1-amino-2-ketoses)

Various Amadori compounds have been prepared by condensation of aldoses with substituted aromatic amines.When these compounds are used as substrates in reaction by baker's yeast, a novel observation is the reversal of Amadori rearrangement resulting in the recovery of amines in quantitative yields.A probable mechanism involving baker's yeast isomerase activity has been proposed.
