It is a colorless to pale yellow oily liquid with a strong, sweet, and spicy odor. Safrole is a chiral molecule, and the (Z)-isomer is the one commonly referred to. It is a naturally occurring substance found in the roots and rhizomes of the Sassafras tree and other plants, and it has been used as a flavoring agent and fragrance component in various products. However, due to its potential health risks, including carcinogenic properties, its use has been restricted or banned in many countries.
